After Dinner "Drinks"

I am woozy as I write this! I'm not a whiskey drinker, but found some in our cabinet from a while back when my mother-in-law visited. Our ninety-something (I dare not tell a lady's age) Nana loves her Jack Daniels- being a true southern girl from the hills of Virginia. This dessert is a fun idea to serve if you have guests and want to break out the good china. Alternatively, you could just serve this in shot glasses as it is pretty rich and a little goes a long way.


You can play with the toppings. My daughter (and my taste tester) prefers the coconut whip cream with fresh berries. I preferred the Cointreau rendition with candied almonds and a square of chocolate.

Serves 4

Ingredients:

  • 2 blocks silken tofu (12 oz ones), (the mori-nu kind)

  • 1 cup Lilys chocolate chips, melted

  • 1 tsp vanilla

  • pinch salt

  • 4-5 tbsp unsweetened cold brew expresso or coffee (store-bought of course)

  • 2 tbsp good bourbon/whiskey (taste first and decide if you need to add a teensy bit more--too much is overpowering)

  • 2 tbsp maple syrup

  • Optional garnishes: toasted macadamia nuts, candied nuts, or fresh berries

  • Optional whipped coconut cream scented with whiskey and/or expresso and a dash of ginger, cardamon, and maple syrup

Instructions:

  1. Chill can of full fat coconut milk in fridge if doing the optional whipped cream topping.

  2. Drain tofu and place in a Vitamix.

  3. Melt chocolate in a small pot set over a larger pot with an inch of water.

  4. When chocolate is almost melted take off of heat and keep whisking until smooth.

  5. Add the chocolate and all other ingredients (coffee, whiskey, maple syrup) to the tofu and blend until smooth.

  6. Pour into serving containers (small coffee cups are super cute) and chill.

  7. Take the dessert out of the fridge 10 minutes before serving (it gets a little thick if it is fully chilled).

  8. Top with any of the following: Whipped coconut cream, toasted macadamia nuts, candied nuts nuts, or fresh berries. Fresh berries are awesome with it!

  9. If doing optional whipped cream, scoop out the hard part (the top) from the can of refrigerated full fat coconut milk. Don't get any of the coconut water below! Beat the hard part (the cream) with hand held mixer until creamy, adding 1 tbsp maple syrup, 2 tsp whiskey, 1/2 tsp ginger (and/or cinnamon), 1/4 tsp cardamon. Adjust seasoning to taste!

Variation:

Swap out the whiskey for Cointreau, adjusting to taste. This is a lovely mix of orange and chocolate. I also added just a touch of orange extract (which Alley did not like). See photo bottom right for Cointreau rendition topped with candied almonds.


Don't want an after dinner drink? Eliminate whiskey, coffee, and maple syrup. Add 2 bananas to tofu, chocolate, and vanilla and blend. Serve with fresh berries on top.
