This recipe is adapted from one of my favorite vegan web sites, Emilie Eats. Her original recipe is delish, but I wanted a little less almond butter and of course, coffee to enhance the chocolate. I also like the addition of miso paste for a salted chocolate flair. These brownies are my go to dessert for three reasons: they are super quick to make, can be made ahead, and can be dressed up with whipped cream or served simply with fresh berries and a dusting of sea salt or powdered sugar. Oh, and they are delicious!
Ingredients
Wet
1/2 cup almond butter
1/2 cup pitted dates, soaked in hot water (I use 8 Medjool)
2 tbsp maple syrup
1 4 oz container apple sauce
1 tbsp mild miso paste (yellow or white) *If you skip the miso paste, add 1/2 tsp salt to dry ingredients.
1/3 cup coffee
2 tsp vanilla extract
Dry
1/2 cup oat flour
1/3 cup cocoa powder (I think Hershey's extra dark is good in this recipe)
1 1/2 tsp baking soda
(If you skip the miso paste, add 1/2 tsp salt)
1/2 cup Lily's dark chocolate chips, plus extra for the top
Instructions:
Soak the dates in hot or boiling water for 15 minutes or more.
Preheat oven to 350 degrees.
Place parchment paper in an 8 by 8 baking dish.
Drain the dates and add them to a food processor/Cuisinart with all the other wet ingredients and blend until smooth.
Mix together dry ingredients, EXCEPT for the chocolate chips.
Add dry ingredients to the wet ingredients in the food processor/Cuisinart and pulse to blend being careful not to over beat the batter.
Stir in the chocolate chips.
Scoop the batter into the parchment lined baking dish. Sprinkle with extra chocolate chips (about 1/3 cup) and an optional touch of flaked sea salt.
Bake for 25-30 minutes. Cool on a wire rack.
Remove from pan and cut into squares. Serve with a light dusting of powdered sugar and fresh berries. These are also delicious with whipped coconut cream or whipped vegan cream lightly seasoned with almond extract and powdered sugar.
Store brownies in refrigerator--chilling these brownies enhances the taste! You can also freeze the brownies with success.
