Apple Crumble

This is an easy vegan, gluten-free dessert that is perfect for casual fall gatherings. I have made it in a pie dish and also in individual ramekins. Eat the leftovers for breakfast topped with plain yogurt--so good. It's basically spiced apples with wholesome granola on top!


Ingredients

  • 5 Honeycrisp or other sweet apples, peeled and cut into small cubes

  • 1 lemon, juice and zest

  • 1/4 tsp salt

  • 1/4 tsp allspice

  • 1/4 tsp nutmeg

  • 1 1/2 tsp cinnamon

  • 2 tsp arrowroot powder (optional: this will thicken the juices but I don't mind a little juice in my crumble)

  • 1 1/2 tsp vanilla extract

  • 3-4 Tbsp sweetener (I use Lakanto brown sugar or maple syrup)

Crumble

  • 1/2 cup almond flour

  • 1 1/4 gluten-free rolled oats

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 3 tbsp almond butter

  • 1/4 cup maple syrup

Instructions

  1. Preheat oven to 375 degrees.

  2. Mix together crumble ingredients and set aside.

  3. Mix filling ingredients together and pour into a 9-inch pie plate.

  4. If preferred, sprinkle top with about 1 tbsp coconut sugar/Lakanto brown sugar/or maple sugar.

  5. Bake for 30-40 minutes or until apples are tender. Cover top with foil if it looks like the topping is burning before finished cooking.
