This is one of my go to salads-it's super healthy and delicious. I serve it with a simple lemon tahini dressing. If you want to add a protein, you can top the salad with some roasted chickpea 'croutons'.
Ingredients:
1 bunch kale, sliced thin
1/4-1/2 cup chopped walnuts
1/4 cup dried cranberries (sub raisin or currants)
1 apple, chopped
1/3-1/2 purple onion, thinly sliced
1/2-1 cup purple cabbage, thinly sliced
Optional ingredients: cucumber and/or red bell pepper
Place all items in a large bowl and drizzle on desired amount of tahini dressing.
Tahini Dressing:
1/4 cup tahini (I like Pepperwood or Soom brands)
1/4 cup fresh squeezed lemon juice
1/4 cup water
1-2 cloves garlic
1/2 tsp salt
Black pepper to taste
Place all of the above in a Vitamix and blend until smooth. Taste and adjust seasoning.
