Apple, Walnut, Cranberry Kale Salad with Tahini Dressing

This is one of my go to salads-it's super healthy and delicious. I serve it with a simple lemon tahini dressing. If you want to add a protein, you can top the salad with some roasted chickpea 'croutons'.


Ingredients:

  • 1 bunch kale, sliced thin

  • 1/4-1/2 cup chopped walnuts

  • 1/4 cup dried cranberries (sub raisin or currants)

  • 1 apple, chopped

  • 1/3-1/2 purple onion, thinly sliced

  • 1/2-1 cup purple cabbage, thinly sliced

  • Optional ingredients: cucumber and/or red bell pepper

Place all items in a large bowl and drizzle on desired amount of tahini dressing.


Tahini Dressing:

  • 1/4 cup tahini (I like Pepperwood or Soom brands)

  • 1/4 cup fresh squeezed lemon juice

  • 1/4 cup water

  • 1-2 cloves garlic

  • 1/2 tsp salt

  • Black pepper to taste

Place all of the above in a Vitamix and blend until smooth. Taste and adjust seasoning.
