I learned on my last trip to Texas that my aunt serves a slaw with most meals. Her slaw ingredients vary, but here is her simplest version. This really does go with everything! We served it on Impossible Burgers, with beans, and in tacos.

Ingredients:
1/2 head purple or green cabbage, sliced VERY VERY thin
3 tbsp red wine vinegar
1 tsp olive oil
1/2 Serrano pepper, finely chopped
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Optional: green bell pepper thinly sliced
Instructions:
Toss all ingredients together and serve! Told you it was simple:)
