Chalupas With Mango/Avocado Salsa

This is a great quick lunch or dinner when you have left over Gma's Black Beans or Gma's Pinto Beans. I like to buy Charras pre- baked corn tortillas to save time. With beans and tortillas already made, all you have to do is whip up a mango/avocado salsa which is more like a spicy lime-flavored slaw. The salsa is VERY flexible and can adapt to whatever you have in your fridge-key ingredients being a Serrano pepper, lime, avocado, and green or purple cabbage. I like to add sautéed mushrooms to the chalupa for immune health, but they are not crucial if you are short on time. This meal is high in fiber (beans), has just the right amount of good fat (avocado), and is topped with raw colorful goodness brimming with antioxidants and vitamins (salsa).

Ingredients:

Instructions:

  1. If you don't have pre-baked corn tostadas, bake or air-fry corn tortillas until hard.

  2. Make avocado/mango salsa (recipe below).

  3. Sauté mushrooms in veggie broth or little olive oil and season with salt, pepper, and garlic powder (add a touch of paprika if you like).

  4. Heat left over beans, smashing some with a potato smasher or fork.

  5. Put a layer of beans on the tortillas; top with mushrooms. Heat in air-fryer, oven, or microwave for a few minutes to warm up, if necessary. Top with as much salsa as you like!

Avocado/Mango Salsa

  • 1 avocado, chopped in chunks

  • 1/4-1/3 purple onion, minced

  • 1/2 -1 whole Serrano pepper, deseeded and finely minced

  • 2-3 garlic cloves, minced

  • About 6-7 cherry tomatoes, sliced into fourths (sub chopped tomato)

  • 1/4-1/2 bell pepper, any color, chopped

  • 1/3-1/2 cup chopped fresh cilantro

  • About 1 cup purple cabbage, finely sliced (sub green cabbage)

  • Juice from 1 lime (or more to taste)

  • Salt and pepper to taste

  • Optional: add 1/2-1 chopped mango

Gently mix ingredients together, being careful not to over mix and turn the avocado to mush. Taste and adjust seasoning.
