Summer is the season for nice cream-a frozen fruit blend that is light and creamy with none of the fat and refined sugar of regular ice cream. This refreshing fruit dessert is a mixture of frozen cherries and banana with a hint of almond extract and cocoa powder, topped with a sprinkle of your favorite vegan chocolate chunks. (I use Lily's brand chocolate because it is sugarless and can be dairy free as well.) So simple, so delicious!!!
Serves 2
Ingredients:
1 10 oz. bag frozen dark sweet cherries
1 large frozen banana
1 tbsp cacao powder
1/4 tsp almond extract
Garnish: 1-2 tbsp chopped chocolate, chocolate chips, or cocoa nibs (photo is Lilys dark chocolate baking bar chopped)
Instructions:
Take frozen fruit out of freezer and let sit for 5 minutes to soften a bit.
Place all ingredients (except garnish) in a food processor (Cuisinart of Vitamix) and blend until smooth. I like to leave some of the cherries a little chunky.
Serve right away or place mixture in freezer to let it firm up for a bit. (I make my nice cream before dinner and let it firm up in the freezer during dinner.) Garnish with chocolate of choice.
