Chocolate Chip Cookies

It took a while to replicate classic Toll House chocolate chip cookies with wholesome, healthy ingredients, but here it is! These cookies are gluten free and use wholesome ingredients such as almond butter, apple sauce, oat flour, chia seed, maple syrup, and Lily's sugar free vegan chocolate chips. They are the perfect choice for a summer cook out, ending your gathering with a healthier dessert without sacrificing taste. If you have any left, store them in the freezer as they taste delicious cold!

Makes about 18 cookies

Ingredients:

Dry

  • 3/4 cup oat flour

  • 1/4 cup almond flour

  • 2 tbsp ground chia seed

  • 1 tsp baking soda

  • 3/4 tsp salt

Wet

  • 1 tbsp ground flax + 3 tbsp water

  • 1/4 cup apple sauce

  • 1/2 cup almond butter

  • 1/4 cup maple syrup

  • 1 tbsp date syrup

  • 1 tbsp vanilla extract

  • 1/2-3/4 cup Lily's chocolate chips

  • Optional: 1/4 cup chopped walnuts


Instructions:

  1. Preheat oven to 375 degrees.

  2. Mix flax with 3 tbsp water and let gel for 5 minutes.

  3. In a bowl, mix the dry ingredients.

  4. Place the almond butter, maple syrup, date syrup, apple sauce, and vanilla extract in a food processor/Cuisinart and blend until creamy. (You could use beaters.)

  5. Add flax egg and blend until creamy.

  6. Add the dry ingredients to the mixture and combine being careful not to overtax.

  7. Fold in the chocolate chips.

  8. Use a cookie scoop to scoop cookies onto a parchment lined cookie tray and bake for 10-14 minutes or until lightly browned. Cool on wire rack.
