This is a delicious and easy treat to make for a holiday gathering or just to have around for an anytime treat. I found this recipe on one of my favorite instagram sites--Nadia's Healthy Kitchen--and just had to share it! You can whip this together SOOOO fast with an air-fryer. But an oven works too. So good that I recommend doubling the recipe--or not, because you won't be able to stop eating it!
Ingredients:
1 can chickpeas, rinsed and drained
1/2 cup Lily's dark chocolate chips chips (vegan and sugar-free!)
Good pinch of salt
Instructions:
If using oven, pre-heat oven to convection 350 degrees.
Drain and rinse the chickpeas and pour them onto paper towels to dry them. Do your best to get them as dry as possible so they can get crunchy.
Oven bake: Bake the chickpeas with a good pinch of salt on a parchment lined tray until crunchy for about 35 minutes.
Air-fryer bake: Put chickpeas in air-fryer basket with a good pinch of salt and bake at 390 degrees until crunchy.
Put the chocolate chips in a bowl, and while the chickpeas are still hot, pour them over the chocolate chips and stir until the chocolate is melted and the chickpeas are coated.
Scoop out spoonfuls onto a wax paper lined tray or plate making little clusters and let them cool a bit before transferring the clusters to the refrigerator to finish setting.
