Due to an accidental online purchase of 6 HUGE bags of puffed millet, I introduce a delicious Nestle's Crunch style snack. These treats are incredibly easy to make and are great for an afternoon chocolate pick me up! They also have some surprising health benefits--hemp for protein and omegas, chocolate for minerals and antioxidants, goji berries for iron, fiber, and vitamins, and nut/seed butter for protein and fiber, and puffed grains for heart health and fiber. I promise you will not be disappointed with these crunchy delights!
Makes 16 squares large squares, 20 small squares
Ingredients:
1 cup puffed millet (or other puffed grains)
3/4 cup Quinoa Crispies (sub any puffed grain-puffed rice or puffed Kamut is good)
1 heaping cup Lily's chocolate chips
2 tbsp almond butter, heaping (sub peanut butter or nut/seed butter of choice)
1/3-1/2 cup dried goji berries, roughly chopped--I like to do half goji berries and half a different berry.
2 tbsp hemp seed
1/8 tsp salt
1 tsp vanilla extract or dried vanilla powder
Optional: 2 Tbsp cocoa nibs (so good!)
Other options: coconut flakes, chopped nuts/seeds, chia seeds, freeze dried fruits, dried and chopped mango, pineapple, or other fruit, etc.
Instructions:
Combine puffed grains, hemp seeds, dried berries, and salt (and optional cocoa nibs).
Place chocolate, vanilla, and almond butter (or other nut/seed butter) in a medium-sized bowl and melt in the microwave using 15 second increments, stirring after each increment, being careful not to burn the chocolate.
Once the chocolate is melted and everything is blended, add the dry ingredients and mix until combined.
Pour the mixture into a parchment or wax paper lined 8 x 8 pan and press the mixture into the pan until evenly spread out.
Place in fridge until firm, then lift wax paper out of pan and cut into small or large squares. Store treats in the fridge until ready to serve.
