I try to eat grains in their most intact form whenever possible. The health benefits of whole grains are numerous, especially for the gut and heart. While this dish takes longer to cook, it reheats well so I make a big batch of it and eat it for three mornings (I eat a lot so this recipe would be four servings for a normal person). I reheat mine in the air-fryer but it would probably work in a microwave as well.
4 Servings
Ingredients:
1/2 cup whole oat groats
1/2 cup hulled barley groats (not pearled)
3 cups water
1 cup non-dairy milk of choice
2 dates, chopped
2 tbsp. raisins
1tsp. cinnamon
1 tsp. vanilla
Pinch of salt (about 1/4 tsp.)
Optional toppings: fresh or cooked fruits, nuts/seeds, vegan yogurt, ground flax, coconut flakes, nibs, etc. See note below for different variations.
Instructions:
Soak the groats overnight: Don't skip this step! Place the barley and oats in a bowl and cover with water. You can put this in the fridge or cover and leave on counter overnight.
When ready to cook, pour out the soaking water and rinse the groats (I'm not gonna lie, I normally just pour out the water and skip the rinsing).
Place groats in a pot with 3 cups of water and a good pinch of salt and bring to a boil.
Once boiling, turn down the heat to a simmer and let cook until the water is almost gone (about 15 minutes).
Add the non-dairy milk, vanilla, chopped dates, raisins, spices and cook another 10 to 15 minutes.
To serve top with any of the following: extra milk, fresh or cooked fruits, nuts/seeds, vegan yogurt, ground flax, coconut flakes, nibs, etc. Or just eat as is!!!!
To reheat: put desired amount in an air-fryer friendly dish and pour over about 1/4 c. almond milk and any additional toppings that you want heated. See some of the suggestions below (air-fried berry toppings and air-fried bananas foster).
Note: Here are some fun topping combos I have used in the past.
Peaches and Dreams--Slice peaches and heat in a small pot with peach pie-like spices (cinnamon, nutmeg, etc.). Top groatmeal with warm spiced peaches and cinnamon spiced candied almonds and a dollop of yogurt.
Tropical Delight--pineapple, mango, orange, kiwi, cocoa nibs, coconut flakes, yogurt
Air-fried Bananas Foster--Leftover groatmeal topped with almond milk and thinly sliced bananas (about 1/4-1/2 banana). Then sprinkle 1/4-1/2 tsp. of date sugar (or coconut sugar) over the bananas. The hope is that the cooking process will caramelize the sugar on the bananas. Air-fry until heated through and top with yogurt and walnuts (ground flax is always good too!)
Air-fried Berry Delight--Left over groatmeal topped with almond milk and fresh or frozen berries and placed in the air-fryer. Then topped with walnuts, ground flax, and vegan yogurt.
