Court's Cocoa Puff Cereal

My son came home from college and he loves cocoa puff cereal. I decided to make him a healthier version than store-bought using flax, chia, and hemp for omega 3s, some peanut butter for protein, and nibs for antioxidants and healthy fat. The puffed quinoa, millet, buckwheat, and rice also added protein and a serving of healthy grains. This cocoa puff version is more like granola, but I loved the clumps so decided to go with it. Pour milk over this cereal or simply eat it by the hand-full, either way it is crunchy, healthy, and tasty!

Makes about 7 cups

Dry

  • 5 cups puffed grains (mix of any kind--quinoa, buckwheat, millet, rice, Kamut, etc.)

  • 4 Tbsp cacao powder

  • 1/4 cup hemp seeds

  • 1/4 cup ground flax seeds

  • 1/4 cup cacao nibs

  • 1/4 cup chia seeds

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

Wet

  • 1/3 cup maple syrup

  • 1/4 cup peanut butter

  • 1/4 cup apple sauce

  • 1 tsp vanilla

Instructions:

  1. Preheat oven to 350 degrees and line 2 pans with parchment paper.

  2. Mix dry ingredients in a large bowl.

  3. Process wet ingredients in a Cuisinart or with a blender and pour over dry ingredients in bowl. Mix throughly.

  4. Spread the cocoa puffs out on the parchment lined baking trays and bake for 20 minutes, stirring after 10 minutes.

  5. Let cool on wire racks.
