High Protein Bread

This is another iteration of my quick and easy Swope Bread except I have bumped up the protein content. For this recipe I use my favorite unflavored organic protein powder (15 grams protein/3 tbsp) as well as wheat germ (4 grams protein/3 tbsp), hemp seeds (10 grams protein/3 tbsp), and sesame seeds (4.8 grams protein/3 tbsp). I also use soy milk -West Soy (9 grams protein/cup) and spelt flour (3 grams/1/4 cup). Feel free to use nuts/seeds of choice. This protein powerhouse bread takes only about 10-15 minutes to whip up and bakes in 40-45 minutes. Toast it and serve with some nut butter or my favorite tofu scramble (by Rainbow Plant Life) and you have an even more protein heavy meal!

Top it with Everything But the Bagel seasoning for a savory bread and toast up the leftovers in an air-fryer or oven for croutons.

Makes one delicious loaf

Ingredients:

Dry

Wet

  • 2 cups unsweetened soy milk (I use organic West Soy)

  • 2 tsp cider vinegar

  • 2 tsp baking soda

  • 2 tbsp maple syrup

Other

  • 1/3 cup hemp seeds

  • 2 tbsp sesame seeds (plus more for sprinkling on top)

  • Optional flaked sea salt for sprinkling on top

Instructions:

  1. Pre heat oven to 375 degrees. (NOTE: you will turn the oven down to 350 degrees when you put the bread in to bake.)

  2. Combine the vinegar and soy milk and let it sit for at least 5 minutes to sour (it will curdle a bit).

  3. Combine the dry ingredients in a large bowl.

  4. Once the milk has soured, add the baking soda and maple syrup to it and stir. Then add the milk mixture to the dry ingredients and stir to combine.

  5. Fold in the hemp and sesame seeds (or nuts/seeds of choice).

  6. Pour the mixture into a parchment lined bread pan and place in the oven. TURN DOWN THE OVEN TO 35O DEGREES and bake for 40-45 minutes or until done.

  7. Let cool on a rack and store in fridge when not eating! You can also bake this bread with Everything But the Bagel seaoning on top to make a delicious avocado toast!
