Lemon Almond Asparagus

Here is an easy prep for healthy asparagus.


Ingredients:

  • 2 bunches of asparagus, washed and patted dry

  • 1-2 tbsp olive oil or spray bottle of olive oil (6-7 sprays)

  • Salt and pepper

  • Juice from 1/2-1 lemon

  • 1/2 tsp lemon zest

  • 1/4-1/2 cup slivered almonds, toasted in a dry skillet

Instructions:

  1. Preheat oven to 400 degrees.

  2. Place asparagus on a parchment lined baking tray. Spray or toss with olive oil and sprinkle with sea salt and fresh ground pepper. Roast for about 15-20 minutes.

  3. Squeeze over lemon juice and gentle swish/toss. Place asparagus on a serving tray and top with almonds and lemon zest.
