Here is an easy prep for healthy asparagus.
Ingredients:
2 bunches of asparagus, washed and patted dry
1-2 tbsp olive oil or spray bottle of olive oil (6-7 sprays)
Salt and pepper
Juice from 1/2-1 lemon
1/2 tsp lemon zest
1/4-1/2 cup slivered almonds, toasted in a dry skillet
Instructions:
Preheat oven to 400 degrees.
Place asparagus on a parchment lined baking tray. Spray or toss with olive oil and sprinkle with sea salt and fresh ground pepper. Roast for about 15-20 minutes.
Squeeze over lemon juice and gentle swish/toss. Place asparagus on a serving tray and top with almonds and lemon zest.
