Lemon Poppy Seed Overnight Oats

Overnight oats are great for meal prep when you don't have time to cook breakfast or when you want to bring a healthy snack to work. There are so many variations of overnight oats, but I like this one for summer mornings because of its refreshing lemony taste. Plus, it reminds me of a lemon poppyseed muffin which I love!


Serves 1

Ingredients

  • 1/2 cup of oats

  • 1 tbsp poppy seeds

  • A pinch of salt

  • A generous sprinkle of nutmeg 1/4 tsp lemon rind (I grate mine with a microplane)

  • 1-2 tbsp lemon juice

  • 2 tsp maple syrup (or more if you like it sweeter)

  • Almond milk (enough to cover the oats)

  • Topping: 1/2 cup of raspberries or 1/2 cup of blueberries (or 1/4 cup of each!)

Instructions

  1. Combine dry ingredients (first 4 ingredients) in a wide mouth Mason jar.

  2. Shake the Mason jar to combine dry ingredients.

  3. Pour enough almond milk to cover the oats (I usually end up using about 1/2 to 3/4 cup).

  4. Add in lemon juice and maple syrup and shake again.

  5. Cover and refrigerate overnight.

  6. Top with raspberries and blueberries before serving.
