Overnight oats are great for meal prep when you don't have time to cook breakfast or when you want to bring a healthy snack to work. There are so many variations of overnight oats, but I like this one for summer mornings because of its refreshing lemony taste. Plus, it reminds me of a lemon poppyseed muffin which I love!
Serves 1
Ingredients
1/2 cup of oats
1 tbsp poppy seeds
A pinch of salt
A generous sprinkle of nutmeg 1/4 tsp lemon rind (I grate mine with a microplane)
1-2 tbsp lemon juice
2 tsp maple syrup (or more if you like it sweeter)
Almond milk (enough to cover the oats)
Topping: 1/2 cup of raspberries or 1/2 cup of blueberries (or 1/4 cup of each!)
Instructions
Combine dry ingredients (first 4 ingredients) in a wide mouth Mason jar.
Shake the Mason jar to combine dry ingredients.
Pour enough almond milk to cover the oats (I usually end up using about 1/2 to 3/4 cup).
Add in lemon juice and maple syrup and shake again.
Cover and refrigerate overnight.
Top with raspberries and blueberries before serving.
