Mango Tango Overnight Oats

This overnight oats recipe has a delicious mix of flavors--dried cherries, mangos, cacao nibs, and almond! Enjoy the fresh taste as well as the healthy boost of: fiber (12.5 gm), antioxidants, omega 3, protein (9 gm), vitamins (K, A, C, + more) and minerals (calcium, copper, manganese, selenium, magnesium, + more).

Serves 1


Ingredients

  • 1/3 cup rolled oats

  • 1 tbsp chia seeds

  • 1 tbsp buckwheat groats

  • 1 tbsp cacao nibs

  • 1/4 tsp chai spice (or other favorite spice)

  • pinch of salt

  • 1 tbsp dried cherries

  • 1/4 tsp almond extract

  • 1/4 cup chopped mango, or as much as preferred

  • Unsweetened almond milk to cover (about 1 cup)

  • Optional toppings: flaked coconut, slivered almonds, additional nibs or mango

Instructions:

  1. Place dry ingredients-oats through dried cherries- in mason jar and shake to mix.

  2. Add mango, almond extract, and plant milk to cover. Shake and add more milk if necessary (the chia and grains will soak up the milk so make sure to amply cover).

  3. Place in fridge overnight. Add additional milk, if needed, and optional toppings! Enjoy!
