My favorite time of day is afternoon tea/coffee time. I wanted to use thyme in these cookies so I could title this post Matcha "Thyme" Cookies. Unfortunately, I wasn't in love with the addition of thyme in the cookies so my pun was ruined. If you are a matcha tea fan, you'll love these cookies-they're addicting!
Makes about 12 cookies
Ingredients:
1 cup oat flour
2 tbsp arrowroot powder
1 tsp baking powder
1/2 tsp salt
3 tsp matcha tea powder (baking grade)
Juice from 1/2 lemon
Rind of 1 lemon
1/2 cup cashew butter
1/4 cup maple sugar
2 tsp vanilla
Glaze:
Juice from 1/2 squeezed lemon
1/4 cup (or more until desired consistency) powdered monk fruit/erythritol (or confectioner's sugar)
Instructions:
Preheat oven to 350 degrees.
Mix dry ingredients together in a bowl (flour through matcha tea powder).
Put wet ingredients in a Cuisinart and mix until smooth.
Add the wet ingredients to the dry ingredients and mix until combined.
Form the dough into 12 balls and place on a parchment lined cookie tray. Flatten the balls slightly to form cookie shape.
Bake for 12-15 minutes.
While the cookies bake, make the glaze by whisking lemon juice with the powdered erythritol or confectioner's sugar. Adjust by adding more sugar or liquid to obtain a drizzle consistency.
When cookies have cooled, drizzle them with glaze and then dust lightly with matcha tea powder. (To create drizzle, snip the corner off of a sandwich size zip loc bag and place glaze mixture inside the bag. Squeeze the glaze through the snipped off corner.)
