Orange You Glad Salad

So many of my fave dishes are made because I mis-ordered on Instacart! I meant to get two oranges and received two bags instead. In the time of Covid I suppose this was an immune boosting mistake as many doctors are recommending extra doses of vitamin C. Fresh salads are super healthy since they give you a good dose of raw veggies and help you to eat a diversity of plants-diversity of plants promotes a healthy gut microbiome.

The orange dressing has a little kick with the addition of harissa paste, and the salad ingredients are versatile-you can adjust the ingredients to what you have in the fridge. This week I topped the salad with a serving of my go to simple lentil salad (scroll down) for some good plant protein. Other good options would be cooked edamame beans or tofu.

Serves 2 as a meal, or 4 as side salad

Ingredients


Orange Tahini Dressing:

  • 2 tbsp tahini

  • 2 tbsp apple cider vinegar

  • 1/4-1/3 cup fresh squeezed orange juice

  • 2 tbsp nutritional

  • 1 tsp garlic powder

  • 1 tsp harissa paste (could sub with 1/4 tsp cayenne pepper)

  • 1/2 tsp salt

  • Freshly ground pepper

Whisk all the ingredients together.


Salad:

  • 1 box baby spinach and arugula blend (you can add extra greens if you have a bigger crowd)

  • 1 cup or more sliced purple cabbage

  • 1-2 stalks celery, sliced

  • 1/4-1/2 purple onion, sliced thin

  • 1-2 carrots ribboned/shredded (I use a potato peeler and grate ribbons)

  • 1/2-1 cup sliced bell pepper, any color or combination of colors

  • 1 orange chopped

  • 1/2-1 cup purple grapes slice in half

  • Top with seeds or nuts: Go Raw Salad Toppers work well here (I love all flavors)

  • Protein options: 1 cup simple lentil salad (scroll down), 1 cup edamame (either pre-cooked or cooked according to pkg.), 1 cup roasted chickpeas, 1 cup or more roasted tofu cubes (toss with tamari, spray with olive oil, roast in oven at 400 degrees or airfryer at 390 degrees)

Toss all the ingredients together (spinach through grapes) with desired amount of salad dressing. Top with seeds/nuts and optional protein choice.


10 Minute Simple Lentil Salad

Cook 1 cup Tru Roots Lentil Blend according to package. Once cooked, drain and add the following ingredients:

  • Olive oil, 1 tbsp or use spray bottle for desired amount

  • 1 1/2 lemons, squeezed

  • 3-4 garlic cloves, put through garlic press

  • 1 bunch scallion/green onion, chopped

  • 1/2 cup chopped curly parsley

  • 1/2-1 tsp salt

  • Freshly ground pepper

  • 1/2 tsp cumin

  • Optional: 1/2 cup chopped cucumbers
