My garden is overflowing with basil, so, in the summer, I make pesto at least once a week. I use it in EVERYTHING--from salad dressing to succotash.
Ingredients
You can also double this recipe if desired.
2 cups of fresh basil
About 1/2 cup of chopped walnuts (or pine nuts, if you prefer)
4-5 garlic cloves
4 tbsp lemon juice
2 tbsp nutritional yeast
Salt to taste
A pinch of red pepper flakes (or use ground black pepper)
Optional: 4 spritzes of olive oil
Water added one tbsp at a time until desired consistency
Instructions
Put all of the ingredients up through the red pepper in a food processor (Cuisinart or Vitamix if you like a smoother consistency).
Spritz with olive oil, if using, and process.
Use water 1 tbsp at a time, as needed, until mixture is at desired consistency (or use more olive oil if you prefer).
