Simple Basil Pesto

My garden is overflowing with basil, so, in the summer, I make pesto at least once a week. I use it in EVERYTHING--from salad dressing to succotash.



Ingredients

You can also double this recipe if desired.

  • 2 cups of fresh basil

  • About 1/2 cup of chopped walnuts (or pine nuts, if you prefer)

  • 4-5 garlic cloves

  • 4 tbsp lemon juice

  • 2 tbsp nutritional yeast

  • Salt to taste

  • A pinch of red pepper flakes (or use ground black pepper)

  • Optional: 4 spritzes of olive oil

  • Water added one tbsp at a time until desired consistency

Instructions

  1. Put all of the ingredients up through the red pepper in a food processor (Cuisinart or Vitamix if you like a smoother consistency).

  2. Spritz with olive oil, if using, and process.

  3. Use water 1 tbsp at a time, as needed, until mixture is at desired consistency (or use more olive oil if you prefer).
