Quick Pizzas

These are the best quick lunches or dinners. If you have some extra store bought or homemade pitas in the freezer then you are in business. I like to make these pizzas with pesto, but you can also use pizza sauce, or no sauce at all! Basically anything you have in the fridge can top these pizzas: I've used figs, butternut squash, radicchio and balsamic, arugula, asparagus, and the list goes on. Also Kite Hill ricotta cheese (plant based of course) is to die for on these.

I like to cook these in the air-fryer to eliminate extra cooking time.


Ingredients/Ideas:

  • Pita bread, lavash bread, or even an Ezekiel English muffin will work

  • Pesto (homemade or store-bought), tomato sauce, pizza sauce, or no sauce

  • Optional toppings: mushrooms, broccoli, asparagus, artichoke, tomatoes, zucchini, bell peppers of any color, figs (fresh or dried), radicchio, sweet potato, squashes, onion, roasted garlic, olives, etc.

  • Kite Hill ricotta cheese or rawmesan (I can't suggest any other cheeses for this since it's hard for me to find cheeses with pure ingredients like Kite Hill has.)

  • Red pepper flakes

  • Olive oil in spray bottle

  • Salt and pepper to taste

Instructions:

  1. Put your preferred sauce on the pita (pesto or tomato). If you choose to do no sauce, maybe do some roasted garlic and/or a drizzle of balsamic.

  2. Put on your preferred veggies. I pre-cook some of my veggies since the air-fryer will zap things pretty quick. (I suggest pre-cooking the following: sautéed mushrooms, steam broccoli, steam asparagus)

  3. Top the veggies with cheese, if using.

  4. Drizzle with balsamic, if using.

  5. Spray the tops with olive oil and season with salt, pepper, red pepper flakes, etc.

  6. Place in air-fryer on 360 degrees for about 10-15 minutes, checking often. Alternatively, cook in an oven at 400 degrees for about 20 minutes.

  7. After cooking, you may consider topping the pizza with micro-greens and rawmesan.


Note Bene: This is an amazing cheese with minimal ingredients that I found at a California Whole Foods. If you can find this cheese, I suggest making a brie, apple, and arugula pizza with a drizzle of balsamic!
