Simple Kale Salad

This is one of my go to salad recipes that I often make when I am short on time. The ingredient list is small and the prep time is minimal. I also have a few variations of this salad (see variations at end of recipe), so I can either jazz it up for a main dish or keep it simple as a side salad.
Serves 2
Ingredients:

1 bunch of kale, sliced thin (I like the curly kind for this recipe but Lacinato kale works too)
1/2 to 1 whole avocado (a whole one tastes best!)
1/2 large lemon or 1 whole small lemon
Salt and pepper to taste
2-3 tbsp. rawmesan
Instructions:
Wash, spin, and cut your kale. I bunch the kale leaves together and slice them into thin strips.
Place kale in a salad bowl and squeeze lemon on top.
Add the chopped avocado, salt, and pepper.
Massage the kale until is a little wilty. See photos below.
Sprinkle with rawmesan and serve!

Variations
You can basically add anything to this salad--be free!
1. Add bell peppers, cucumbers, carrots, radicchio, onion, and roasted chickpeas. Skip rawmesan. (See photo on left)
2. Add purple onion, cooked lentils, and oranges.
3. Add 1 tbsp white balsamic vinegar to the massaging section. After massaging, add chopped/sliced purple onion, sliced purple cabbage, and 1 chopped apple afterwards (optional raisins/cranberries/nuts/seeds). Skip rawmesan.
