I love having hummus on hand for a quick snack. I try to keep cut broccoli and cauliflower for dipping as well, and when my son Court is home I go all out and make pita bread for him. Of course, it's best with the pita bread.
Ingredients:

1 can chick peas, drained and rinsed (reserve about 1/2 cup of the liquid)
1/4 cup tahini
1/4 cup lemon juice
1 tbsp harissa paste (or less depending on your preference). I like two kinds--one is very spicy and the other is less spicy
2-3 fresh garlic cloves or 4 roasted garlic cloves in the air-fryer
1/4-1/2 cup reserved chick pea liquid
Salt and pepper to taste
Optional other spices: 1/2 tsp garlic powder, 1/4 tsp smoked paprika, 1/4 tsp Middle East spices/Zatar seasoning (I like this one), etc.
Optional for a smoother consistency: 1-2 tbsp olive oil (sometimes I spritz mine with a few sprays)
Instructions:
Place chick peas, tahini, lemon, garlic, harissa, preferred spices, and 1/4 cup reserved chick pea liquid in a Cuisinart and puree until smooth.
Add more reserved chick pea liquid if necessary.
Adjust taste (lemon, salt, pepper, spices, etc.) and add olive oil if necessary for a smoother texture.
When finished, place in a bowl and spray top with olive oil and sprinkle with smoked paprika and Middle Eastern spices or Zatar (I like this one), You can also top with roasted chick peas.
