This is recipe is based on a chia pudding recipe from Brenda Davis's cookbook Kick Diabetes. I thought the matcha tea powder would make a vibrant green chia pudding, but a murky green is what I got instead. Nonetheless, it is delicious and counts as green for a St. Patrick's Day dessert, breakfast, or snack! If you love chia pudding and matcha tea, you will love this combo!
Serves 2
Ingredients:
1 cup unsweetened almond milk
2 Medjool dates
1 tsp (heaping) matcha tea powder
1/2 tsp vanilla extract
3 tbsp chia seeds
1/3 small banana chopped
Toppings: 1 tbsp coconut flakes and 2 tsp cacao nibs
Optional: top with sliced green kiwi
Instructions:
Place milk, dates, matcha tea powder, and vanilla in a Vitamix and blend until smooth. Add the chia seeds and pulse to combine (don't puree the seeds).
Pour the mixture into a bowl and place in the refrigerator. After 30-40 minutes stir or whisk the mixture to eliminate any clumping. When the mixture has thickened a little, fold in the chopped banana and place the pudding into two small mason jars. Top with coconut flakes and cocoa nibs and let the mixture finish thickening-overnight or at least a couple of hours. Top with sliced kiwi to finish off the green look!
