This has been my go to dressing for the summer--so lemony, tiny kick, and tinge of smoke. Yummy on any kind of salad!
Ingredients:
1/4 heaping cup tahini (this is my fave)
1/2 cup water
2 garlic cloves
3 tbsp nutritional yeast
1 tbsp harissa paste (adjust according to spiciness)
Zest of 1 lemon--Don't skip this!!!
Juice of 1 1/2-2 lemons
1 tsp salt
1 tsp sumac
1/4 tsp smoked paprika
1/2 tsp turmeric, optional
Directions:
Place everything in a Vitamix and blend until creamy. Taste and adjust seasoning.
Variation: For a stronger tahini profile, use 1/3 cup tahini instead of 1/4 cup.
