This delicious nice cream reminds me of tiramisu boasting a lovely marriage of almond, chocolate, and a hint of coffee. Top it with almond slivers and cacao nibs and it's to die for. I made a big batch and have been eating it all week!
Serves 2
Ingredients:
2 frozen bananas (let defrost for about 5 minutes)
2 tbsp slivered almonds, plus more for garnish
1/2 tsp almond extract
1 tbsp cacao powder
1/8 cup coffee or cold brew (may need 2-3 more tbsp)
Garnish: cacao nibs, slivered almonds, dusting of cacao powder
Instructions:
Place all ingredients (except garnish) in a food processor or Vitamix and blend until smooth. You may need to stop the machine and scrape down the sides intermittently.
Use an ice cream scoop to serve right away or store in freezer and scoop later. Garnish with a sprinkle of cocoa powder and some slivered almonds.
