TLT Sammie

When you are in the mood for a quick sandwich, a tempeh, lettuce, tomato (and avocado) does the trick! This recipe is a play on the traditional BLT or bacon, lettuce, tomato sandwich and uses the delicious Fakin' Bacon by Lightlife brands food (now it's called smoky tempeh strips).

Serves 1

Ingredients:

  • 2 slices of bread of choice, toasted (really good with pumpernickel)

  • Fakin Bacon strips (2-3)

  • Tomato, sliced

  • Lettuce

  • Avocado, sliced or mashed

  • Mustard

  • Salt and pepper to taste

  • Optional: sprouts

Instructions:

  1. Brown the smoky tempeh strips in a non-stick skillet, flipping as necessary.

  2. Toast bread.

  3. Slice tomato and avocado.

  4. Cut the tempeh strips in half as they are too long for the average piece of bread.

  5. Slather mustard on one piece of toasted bread and assemble the sandwich as preferred.

Variation:

Skip the avocado and serve with raw sauerkraut instead on toasted pumpernickel.
