Tasty Tofu

I am always looking for different ways to cook tofu. I especially like it when I have pre-cooked items in the fridge to toss on salads or to serve with anything. This is one of those easy meal preps that's great to have on hand. I actually eat it cold straight from the fridge as a snack! You can grill the tofu as k-bobs if you are having guests, throw it cubed in the air-fryer if presentation doesn't matter, or bake it in the oven if you don't have an air-fryer (you NEED to get one) or a grill/grill pan. So easy, so quick, so yummy!


Ingredients:

  • 1 block firm or extra firm tofu, pressed/drained/dried

Marinade

  • 1/4 cup canned lite coconut milk

  • 2 tbsp soy or tamari

  • 1 tbsp peanut butter

  • 1 tbsp maple syrup

  • 1 tbsp vegan fish sauce

  • 1/2 tbsp siracha (optional)

  • 2 tsp curry powder

  • 1 tsp turmeric

  • 2 tsp garlic powder

  • 3 tsp dry ginger powder



Instructions:

  1. Press/drain/dry the tofu then cut it into your preferred shapes (cubes, strips, steaks, etc.). Cut into small cubes and skewer if you want to serve it as an appetizer.

  2. Whisk together the marinade mixture.

  3. Place the dried off tofu into the marinade and forget about it for a while (at least an hour)! I have even marinated this the day before.

  4. When ready to cook, choose one of the following methods:

  • Grill: Skewer the tofu. Spray a grill or grill pan with peanut oil and grill skewered tofu (as pictured above). Don't burn yours as I did!

  • Bake: Place tofu on a foil-lined pan and bake at 425 degrees for 15-20 minutes (pictured bottom right).

  • Air-fry: Place tofu on a greased air-fryer grill, set inside the air-fryer. Air-fry at 360 degrees (you may want to turn it up to 390 toward the end if it's not browning) for about 10-15 minutes. This is my preferred method.
