Nice cream is a wonderful light after dinner treat. It's basically pureed frozen fruit made creamy with a bit of banana. It's fun to think of creative ways to combine different fruits and toppings. For this nice cream, I combined three forms of pineapple-fresh, frozen, and dried-so that the delicious and refreshing essence of pineapple floods the taste buds. Perfect for a hot summer night!
Serves 2
Ingredients:
1 cup fresh pineapple frozen
1 banana, cut and frozen
1/4 cup almond milk (or other plant milk)
1/4 tsp vanilla
1/8-1/4 cup unsweetened dried pineapple, chopped
Dash of 5 spice powder
1/4 cup fresh pineapple, chopped
Optional toppings: coconut flakes,
toasted nuts (macadamia, pecan, etc), sprinkle of vanilla powder or 5 spice powder
Instructions:
Put frozen pineapple, frozen banana, and almond milk in Vitamix and puree until smooth.
Add dried pineapple, vanilla, and 5 spice and blend quickly-you want the dried pineapple to still be chunky, not pureed.
Use an ice cream scoop to put the nice cream into 2 serving dishes.
Top with fresh pineapple, coconut flakes, sprinkle of 5 spice or chai, and optional toasted nuts.
