Tropical Groatmeal

I know everything should be pumpkin right now, but hey, it's still sunny and hot down here in Florida! Since I had left over canned pineapple and mandarin oranges from another recipe, I threw them in my groatmeal and a new fave was born--tropical groatmeal!

Makes 3-4 servings

Ingredients:

  • 1/2 cup barley groats

  • 1/2 cup oat groats

  • 3 cups water

  • 1 cup almond milk

  • 1/2 cup crushed pineapple

  • 1 can mandarin oranges drained

  • 2 dates, chopped

  • 2 tbsp raisins

  • 1 tsp cardamon

  • pinch cloves

  • 1/8 tsp salt

  • Toppings: flaked coconut, chopped mango, pecans, ground flax


Instructions:

  1. Soak groats in water overnight.

  2. The next morning, drain and rinse the groats and place in a pot with 3 cups water and a good pinch of salt. Bring to a boil, then simmer for about 15 minutes or until the water is almost gone. Then add pineapple, oranges, raisins, dates, spices, and the almond milk. Stir and let cook another 10-15 minutes.

  3. Place some groats in a bowl and add toppings of choice. You can also serve with fresh fruit and a dollop of unsweetened plant yogurt.

  4. Save leftovers and reheat with plant milk the next day.
